Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your mini muffin tin with butter or non-stick spray to prevent sticking.
  2. In a large bowl, whisk together 1 cup all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, 1 teaspoon cinnamon, ½ teaspoon nutmeg, and ¼ teaspoon salt until evenly combined.
  3. In a separate medium bowl, whisk 1 cup buttermilk, 1 large egg, ½ cup pumpkin puree, 2 tablespoons melted butter, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract until smooth and creamy.
  4. Pour the wet mixture into the dry ingredients. Gently stir with a spatula or spoon until just combined. Don’t overmix—lumps are okay and help keep the pancake bites tender.
  5. Spoon the batter into each mini muffin cup, filling about ¾ full for a nice puff. Don’t overfill or they’ll spill over and get messy.
