  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 ¼ cups (300ml) buttermilk (or 1 ¼ cups milk + 1 tablespoon lemon juice/vinegar, let sit 5 minutes)
  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup (about 150g) fresh blueberries, washed and dried
  • For the bourbon maple syrup:
  • ½ cup (120ml) pure maple syrup
  • 2 tablespoons bourbon
  • 1 tablespoon unsalted butter

Instructions

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar until evenly combined.
  2. In a separate medium bowl, beat the egg until slightly frothy. Add buttermilk, melted butter, and vanilla extract; whisk to combine.
  3. Pour wet ingredients into dry ingredients and gently fold with a spatula until just combined; batter should be a bit lumpy.
  4. Gently fold in the blueberries, taking care not to crush them.
  5. Let the batter rest for 10 minutes at room temperature.
  6. Preheat a non-stick skillet or griddle over medium-low heat and lightly grease with butter or oil.
  7. Using a ¼ cup measure, pour batter onto the hot surface. Cook until bubbles form and edges look set, about 2-3 minutes.
  8. Flip carefully and cook the other side until golden brown, about 1-2 minutes more. Adjust heat as needed.
  9. While pancakes cook, combine maple syrup, bourbon, and butter in a small saucepan over low heat. Stir until butter melts and syrup is warm; keep warm.
  10. Serve pancakes stacked and drizzled generously with bourbon maple syrup.

Notes

Do not overmix the batter to avoid tough pancakes; lumps are okay. Letting the batter rest improves fluffiness. Use medium-low heat to cook evenly without burning. Bourbon in syrup can be omitted for a non-alcoholic version. Frozen blueberries should be added frozen to avoid soggy batter.
