A quick and easy grilled flatbread pizza featuring sweet nectarines, salty prosciutto, and melty mozzarella, perfect for fresh and flavorful summer meals.

  • 2 pieces flatbread, about 8-10 inches each (whole wheat preferred)
  • 2 ripe but firm nectarines, sliced thinly
  • 4 ounces (115g) prosciutto, thinly sliced
  • 1 cup (100g) shredded or sliced fresh mozzarella cheese
  • A handful of arugula for topping
  • 2 tablespoons olive oil, for brushing and drizzling
  • 1 teaspoon honey (optional, for drizzling)
  • A few leaves of fresh basil or thyme for garnish
  • Freshly cracked black pepper, to taste
  • Light sprinkle of sea salt, if needed

Instructions

  1. Preheat the grill or grill pan to medium-high heat, about 400°F (200°C), for approximately 10 minutes.
  2. Wash and slice nectarines thinly, about 1/4-inch thick. Pat dry if very juicy to prevent sogginess.
  3. Lightly brush both sides of each flatbread with olive oil to keep them crispy and flavorful.
  4. Place flatbread directly on the grill grates or pan. Grill for 2 minutes on one side until grill marks appear and bread firms up.
  5. Flip the flatbread carefully. Quickly layer mozzarella, nectarine slices, and prosciutto on top. Close the grill lid if possible and grill for 3-4 minutes until cheese melts and prosciutto warms and crisps slightly.
  6. Remove flatbread from grill. Top with fresh arugula, drizzle with honey, sprinkle with cracked black pepper, and garnish with fresh basil leaves.
  7. Slice into wedges and serve immediately while warm and gooey.

Notes

Use medium-high heat (around 400°F) to avoid burning the flatbread. Brush both sides with olive oil to prevent sticking and keep crispiness. Add toppings quickly after flipping to maintain heat. Add fresh toppings like arugula and honey only after grilling to keep them fresh and vibrant. For dairy-free, substitute mozzarella with plant-based cheese or omit. For gluten-free, use certified gluten-free flatbread.
