These grilled baby back ribs feature a sticky honey bourbon glaze that creates a sweet, smoky, and tender BBQ dish perfect for busy weeknights or gatherings.

  • 2 to 3 pounds pork baby back ribs, trimmed of excess fat
  • 1/4 cup honey (raw or wildflower preferred)
  • 1/4 cup bourbon (e.g., Buffalo Trace)
  • 1/2 cup BBQ sauce (smoky or sweet style)
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • Optional: pinch of cayenne pepper
  • Optional: splash of Worcestershire sauce

Instructions

  1. Remove the silver skin membrane from the back of the ribs by sliding a knife under and peeling it off (about 10 minutes).
  2. In a small bowl, mix salt, pepper, garlic powder, onion powder, smoked paprika, and brown sugar. Rub this evenly over both sides of the ribs. Let rest for 15 minutes.
  3. Preheat the grill to medium heat (about 300°F). If using charcoal, bank the coals to one side for indirect cooking.
  4. Tightly wrap the ribs in aluminum foil, sealing to keep in moisture. Place the wrapped ribs on the cooler side of the grill.
  5. Grill covered for about 1 hour 15 minutes. Check after an hour; the meat should be tender enough to pull away from the bone but not falling apart.
  6. While ribs cook, whisk together honey, bourbon, BBQ sauce, and apple cider vinegar in a bowl. Adjust sweetness or tang as desired.
  7. Carefully remove ribs from foil. Place ribs back on the grill over direct heat. Brush generously with the honey bourbon glaze.
  8. Grill ribs for 10-15 minutes, turning and basting every 3-4 minutes until sticky and caramelized. Watch closely to avoid burning.
  9. Remove ribs and let rest 5 minutes before slicing between the bones.

Remove the membrane for tenderness and better flavor absorption. Use indirect heat with foil wrapping to keep ribs moist. Apply glaze near the end to avoid burning sugars. Watch grill temperature to prevent flare-ups. Rest ribs before slicing to redistribute juices. If glaze burns, move ribs to indirect heat to finish cooking.
