  • 1 pound large shrimp, peeled and deveined
  • Wooden or metal skewers (soaked in water if wooden)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh lime juice
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse the peeled and deveined shrimp under cold water and pat dry with paper towels.
  2. In a medium bowl, whisk together olive oil, honey, soy sauce, lime juice, smoked paprika, chili powder, garlic powder, cayenne pepper (if using), salt, and black pepper until smooth.
  3. Add the shrimp to the bowl with the glaze and toss gently to coat all sides. Let sit for 10–15 minutes at room temperature.
  4. Thread 4–5 shrimp per skewer, laying them flat without overlapping.
  5. Preheat grill to medium-high heat (about 400°F). Clean and lightly oil the grates.
  6. Grill the shrimp skewers for 2–3 minutes per side, flipping once, until pink and slightly charred.
  7. Brush additional glaze on shrimp during the last minute of grilling on each side.
  8. Remove skewers from grill and let rest for 2 minutes.
  9. Serve hot with lime wedges and optional chopped fresh cilantro.

Notes

Do not overcook shrimp to avoid rubbery texture; marinate shrimp for no longer than 20 minutes to maintain texture; soak wooden skewers in water for at least 30 minutes to prevent burning; brush extra glaze during grilling for caramelized finish; manage flare-ups due to sugar in glaze with a spray bottle of water.
