  • Ripe avocados, mashed but still chunky

  • Cremini mushrooms, sliced
  • Minced garlic
  • Fresh thyme leaves (or dried)
  • Butter and olive oil blend for sautéing

Instructions

  1. Preheat oven to 400°F (200°C). Slice baguette into 1/2-inch thick pieces. Arrange on baking sheet and brush both sides lightly with olive oil.
  2. Toast bread in oven for 8-10 minutes, flipping halfway, until golden and crisp. Rub cut side of garlic cloves over each slice. Set aside to cool slightly.
  3. In a medium bowl, combine diced Roma tomatoes, chopped basil, and minced red onion. Drizzle with 1 tablespoon olive oil and 1 teaspoon balsamic vinegar. Season with salt and pepper. Mix gently and let sit for 10 minutes.
  4. In another bowl, mash ripe avocados until chunky. Stir in crumbled feta, 1 tablespoon fresh lemon juice, chopped cilantro, and red pepper flakes if using. Season with salt. Keep chilled until serving.
  5. Heat 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium heat. Add minced garlic and cook 30 seconds until fragrant.
  6. Add sliced cremini mushrooms and thyme leaves. Cook 6-8 minutes, stirring occasionally, until mushrooms are tender and browned. Season with salt and pepper. Remove from heat and let cool slightly.
