These bacon-wrapped dates stuffed with creamy goat cheese offer a perfect blend of sweet, salty, and savory flavors, making them an irresistible and easy appetizer for parties.

Ingredients

  • Medjool dates, pitted
  • Soft fresh goat cheese (such as Chèvre)
  • Thin slices of bacon
  • Toothpicks
  • Optional: honey for drizzling
  • Optional: crushed red pepper flakes

Instructions

  1. Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Slice each pitted date lengthwise on one side to create a pocket.
  3. Fill each date’s pocket with about 1 teaspoon of goat cheese. Optionally, mix herbs or black pepper into the cheese before stuffing.
  4. Cut bacon slices in half or thirds depending on length. Wrap one piece of bacon around each stuffed date and secure with a toothpick.
  5. Arrange the wrapped dates on the baking sheet about 1 inch apart.
  6. Bake for 20–25 minutes, turning halfway through, until bacon is golden and crispy.
  7. Optionally drizzle honey or sprinkle crushed red pepper flakes over the hot dates.
  8. Let cool for 5 minutes before serving.

Notes

Use thin bacon slices for best crispness. Soak toothpicks briefly in water to prevent burning. Turn dates halfway through baking for even crisping. Optionally chill stuffed dates before wrapping to keep cheese in place. Can be made ahead and refrigerated up to 24 hours before baking.
