  • 1/4 cup (30g) powdered sugar
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt

Instructions

  1. Pop the popcorn using 1/2 cup (100g) kernels on the stove or with an air popper until you have about 12 cups (280g). Transfer to a large mixing bowl, removing any un-popped kernels. (5-7 minutes)
  2. Melt 1 cup (175g) white chocolate chips with 2 tablespoons (30g) melted butter in a medium saucepan over low heat. Stir constantly with a silicone spatula until smooth and glossy. Remove from heat and stir in 1 teaspoon (5ml) vanilla extract and a pinch of salt. (5 minutes)
  3. Fold in 1/2 cup (75g) red candies, 1/2 cup (75g) blue candies, and 1 cup (50g) mini marshmallows into the popcorn gently to avoid crushing the candies. (2 minutes)
  4. Slowly drizzle the melted white chocolate over the popcorn mixture, using the spatula to coat evenly. Work quickly but gently to avoid clumping. (3 minutes)
  5. Spread the popcorn mix evenly on a parchment-lined baking sheet in a single layer. Let cool at room temperature until the chocolate sets and hardens, about 30 minutes. Refrigerate for 10 minutes if desired but avoid sweating.
