This easy weeknight taco soup with ground turkey comes together in under an hour and tastes like you spent all day stirring. The ground turkey keeps it light, but the smoky, spicy broth makes it feel like a real meal.

  • 1 tablespoon olive oil
  • 1 pound ground turkey (93% lean)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste (start with 1/2 teaspoon salt and 1/4 teaspoon pepper)
  • 1 can (14.5 ounces) diced tomatoes with green chiles (e.g., Rotel)
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 cup frozen corn kernels
  • For toppings: shredded cheddar cheese, sour cream or Greek yogurt, fresh cilantro, diced avocado, crushed tortilla chips, lime wedges

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (5-7 minutes).
  2. Add the diced onion to the pot and cook for 3-4 minutes until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle the taco seasoning, ground cumin, smoked paprika, salt, and pepper over the turkey and onions. Stir well and cook for 1 minute to toast the spices.
  4. Add the diced tomatoes with green chiles and fire-roasted diced tomatoes (with juices), then pour in the chicken broth. Stir, scraping up any browned bits from the bottom.
  5. Stir in the rinsed black beans, kidney beans, and frozen corn. Bring to a boil, then reduce heat to low and simmer uncovered for 20-25 minutes.
  6. Taste and adjust seasoning as needed (more salt, cumin, lime juice, or hot sauce).
  7. Ladle into bowls and serve with desired toppings.

Notes

For a thicker soup, simmer uncovered for an extra 10-15 minutes. For a thinner broth, add another 1/2 cup of chicken broth or water. The soup tastes even better the next day. To make it vegetarian, skip the turkey and use two cans of beans plus vegetable broth.
