  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend with chili powder, cumin, paprika)
  • 1/3 cup water
  • Salt and pepper, to taste
  • 810 individual bags of Fritos or Doritos (classic or nacho cheese flavor)
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped green onions
  • Hot sauce or salsa, to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook for about 6-8 minutes, breaking the beef apart with a spatula until browned and the onions are soft. Drain any excess fat.
  2. Stir in the minced garlic and cook for 30 seconds until fragrant. Sprinkle the taco seasoning over the beef, then pour in 1/3 cup water. Stir to combine.
  3. Reduce heat to medium-low and let the mixture simmer for 5 minutes, stirring occasionally, until the sauce thickens and coats the meat. Taste and adjust salt and pepper as needed.
  4. Dice tomatoes, shred lettuce, and slice olives and green onions. Set out shredded cheese and sour cream.
  5. Carefully open each chip bag and spoon in about 1/3 to 1/2 cup of the seasoned meat. Top with cheese, tomatoes, lettuce, a dollop of sour cream, olives, and green onions. Add hot sauce or salsa if desired.
  6. Serve immediately with napkins and enjoy your personal taco feast on the go.

Notes

Do not overload the chip bags too early to keep chips crunchy. Add meat and toppings just before serving. Use sturdy chip bags to prevent tearing. For a vegetarian version, substitute ground beef with seasoned black beans or lentils. Prep toppings a day ahead and keep refrigerated.
