These Easy Turkey & Cheese Pinwheel Lunchbox Roll-Ups are the perfect solution for busy mornings. Made with simple ingredients like tortillas, deli meat, cheese, and cream cheese, they come together in just 10 minutes and are kid-approved and adult-friendly.

Ingredients

Scale
  • 4 large flour tortillas (10-inch size works best; burrito-sized if you want bigger pinwheels)
  • 4 oz cream cheese, softened to room temperature
  • 68 slices of turkey deli meat (oven-roasted turkey breast recommended)
  • 4 slices of cheese (provolone, cheddar, or Swiss)
  • 1/2 cup shredded lettuce (optional, patted dry)
  • Salt and pepper to taste

Instructions

  1. Soften the cream cheese by letting it sit out for 15-20 minutes or microwaving in 10-second bursts until soft but not melted.
  2. Lay out a tortilla on a clean cutting board. If stiff, warm it in the microwave for 10 seconds between damp paper towels.
  3. Spread the cream cheese evenly over the entire surface of the tortilla, leaving about a 1-inch border around the edges.
  4. Layer the turkey slices over the cream cheese, overlapping them slightly to cover the surface.
  5. Add the cheese slices on top of the turkey, tearing to fit evenly across the tortilla.
  6. Sprinkle on the shredded lettuce if using, making sure it’s patted dry.
  7. Season lightly with salt and pepper.
  8. Roll the tortilla up tightly, starting at one edge and rolling firmly but gently, tucking the filling in as you go.
  9. Wrap the roll tightly in plastic wrap or parchment paper, twisting the ends like a candy wrapper to seal. Refrigerate for 15-20 minutes if time allows.
  10. Unwrap the roll and use a sharp serrated knife to slice into 1-inch thick rounds using a gentle sawing motion.
  11. Pack the pinwheels in lunchbox containers with a paper towel to absorb moisture.

Notes

For cleanest slices, chill the wrapped roll for at least 30 minutes. The cream cheese firms up and holds everything together. If in a rush, even 5 minutes in the freezer helps. Pat lettuce completely dry to avoid sogginess. These taste better after sitting in the fridge for a few hours as flavors meld together.
