  • 45 boneless, skinless chicken breasts (about 2 to 2 ½ pounds / 9001150 grams)
  • 1 ½ cups BBQ sauce (Sweet Baby Ray’s recommended)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or brown sugar (optional)
  • 68 soft sandwich buns (brioche or potato buns recommended)
  • Optional toppings: coleslaw, pickles, sliced red onions, jalapeños

Instructions

  1. Rinse and pat dry chicken breasts. No trimming needed unless excess fat.
  2. In a small bowl, combine onion powder, garlic powder, smoked paprika, salt, and pepper. Sprinkle evenly over chicken breasts.
  3. Place seasoned chicken in crockpot. Pour BBQ sauce over chicken. Add apple cider vinegar and honey or brown sugar if using. Stir gently to coat chicken without removing it from the bottom.
  4. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours until chicken reaches 165°F and shreds easily.
  5. Remove chicken from crockpot and shred using two forks or shredder claws.
  6. Return shredded chicken to crockpot and stir with remaining sauce. Adjust seasoning or add more BBQ sauce if desired.
  7. Toast buns lightly. Assemble sandwiches by piling shredded chicken and adding optional toppings.
  8. Serve immediately while warm. Store leftovers in airtight container in fridge up to 4 days.

Notes

Use fresh chicken breasts for best texture; frozen chicken requires extra cooking time. Season chicken before adding BBQ sauce for deeper flavor. Cook on low for juicier chicken. Shred gently to avoid mushy texture. Toast buns lightly to prevent sogginess. To thicken sauce, mix 1 tsp cornstarch with 2 tsp cold water and cook on high for 15 minutes.
