  • 1 can (15 oz or 425g) kidney beans, drained and rinsed
  • 2 cups (480 ml) beef broth (low-sodium preferred)
  • 1 packet (1 oz or 28g) taco seasoning
  • 1 packet (1 oz or 28g) ranch seasoning mix (not dip mix)
  • Optional toppings: shredded cheddar cheese, sour cream, fresh cilantro, diced avocado, tortilla chips, sliced jalapeños, lime juice

Instructions

  1. Brown the Beef: Place a large pot over medium-high heat. Add ground beef and diced onion. Cook, breaking up the meat, until beef is browned and onion is softened, about 5-7 minutes. Drain excess fat if needed, leaving about 1 tablespoon.
  2. Add Aromatics: Add minced garlic and stir constantly for about 30 seconds until fragrant.
  3. Add Canned Goods: Add undrained diced tomatoes, tomato sauce, drained corn, drained black beans, and drained kidney beans. Stir to combine.
  4. Add Broth and Seasonings: Pour in beef broth. Sprinkle taco seasoning and ranch seasoning mix over the top. Stir well to dissolve seasonings.
