  • 2 tablespoons (30ml) vegetable oil (avocado or canola)
  • 2 cups cooked sushi rice or jasmine rice
  • 1 cup steamed broccoli florets
  • 1/2 cup carrot ribbons or matchsticks
  • Furikake seasoning (optional, for sprinkling)
  • 1 tablespoon toasted sesame seeds (for garnish)
  • 2 tablespoons thinly sliced green onions (for garnish)

Instructions

  1. Prep your ingredients: Mince garlic, grate ginger, slice green onions, and cut chicken thighs into 1-inch cubes. Pat chicken dry with paper towels.
  2. Make the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil. In another small bowl, mix cornstarch with 2 tablespoons cold water to make a slurry.
  3. Sear the chicken: Heat a large skillet over medium-high heat and add vegetable oil. Once shimmering, add chicken pieces in a single layer (work in batches if needed). Cook undisturbed for 3-4 minutes until golden brown, then flip and cook another 3-4 minutes until cooked through.
  4. Glaze the chicken: Reduce heat to medium-low. Pour sauce mixture over the chicken, stirring to coat and scraping up browned bits. Simmer for 2 minutes. Stir the cornstarch slurry, then pour into the pan. Stir continuously for 1-2 minutes until the sauce thickens into a glossy glaze.
