  • 2 tablespoons apple cider vinegar

  • Juice of ½ lime (fresh only)
  • 1 tablespoon cornstarch (optional, for extra-thick glaze)

Instructions

  1. Preheat oven to 250°F (120°C). Line a large baking sheet with foil and place a wire rack on top.
  2. Pat chicken wings completely dry with paper towels (this is crucial for crispy skin).
  3. In a large bowl, combine baking powder, salt, pepper, garlic powder, and onion powder. Add wings and toss until evenly coated.
  4. Place wings on the wire rack in a single layer, ensuring they aren’t touching.
  5. Bake at 250°F (120°C) for 30 minutes to render fat slowly.
  6. Increase oven temperature to 425°F (220°C). Bake for 40-45 minutes, flipping halfway through, until skin is golden brown and crispy.
  7. While wings bake, prepare the glaze: In a small saucepan over medium heat, combine honey, minced habaneros, butter, apple cider vinegar, and soy sauce. Stir until butter melts and mixture simmers.
  8. Reduce heat to low and cook for 5-7 minutes, stirring often, until slightly thickened. If using cornstarch, whisk with 1 tablespoon cold water to make a slurry, then stir into glaze and cook 1 minute until glossy.
  9. Remove from heat and stir in fresh lime juice. Taste and adjust heat if desired.
  10. Once wings are crispy, remove from oven and transfer to a large bowl. Pour about two-thirds of the glaze over wings and toss gently to coat.
