This smoky roasted green tomato salsa is a happy accident turned fall tradition. It’s quick, easy, and packed with deep, campfire-smoky flavor that’s perfect for chips, tacos, or any cozy gathering.

Ingredients

Scale
  • 4 medium green tomatoes (about 1.5 lbs), quartered
  • 1 medium white onion, quartered
  • 4–5 garlic cloves, peeled
  • 1 large jalapeño pepper, stemmed
  • 1/2 cup fresh cilantro, packed
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika (optional)
  • 1 teaspoon kosher salt, plus more to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 425°F (220°C). Wash and dry green tomatoes, cut into quarters, remove tough stem core. Place tomato quarters, quartered onion, peeled garlic cloves, and whole jalapeño on a rimmed baking sheet.
  2. Drizzle olive oil over vegetables and toss gently to coat. Sprinkle with 1/2 teaspoon salt. Roast for 15 minutes, then shake the pan. Continue roasting until tomatoes are soft and starting to char, and jalapeño skin is blistered and blackened, about 20-25 minutes total. For extra smokiness, broil for the last 2 minutes, watching closely.
  3. Remove from oven and let cool for 5 minutes. Peel blackened skin off jalapeño, discard stem and seeds (or keep some seeds for more heat).
  4. Transfer roasted vegetables and any pan juices to a food processor or blender. Add cilantro, lime juice, cumin, smoked paprika (if using), and remaining 1/2 teaspoon salt. Pulse 5-6 times for chunky salsa, or blend continuously for smoother texture.
  5. Taste and adjust seasoning with more salt, lime juice, or heat as desired.
  6. Serve warm, at room temperature, or chilled. Store in an airtight container in the refrigerator for up to 5 days.

Notes

For extra smokiness, add 1-2 chipotle peppers in adobo sauce when blending. Let the salsa rest in the fridge for an hour or overnight for flavors to meld. If you over-char the tomatoes, don’t panic—it may result in a more intense, delicious salsa. Garlic burns faster than tomatoes; if cloves are small, add them halfway through roasting or tuck under tomatoes.
