These easy smoked salmon cucumber bites are a light, elegant, and quick-to-make brunch appetizer featuring crisp cucumber rounds topped with creamy lemon-dill cream cheese and silky smoked salmon.

Ingredients

Scale
  • 1 large English cucumber, sliced into half-inch rounds
  • 4 ounces smoked salmon, thinly sliced
  • 4 ounces cream cheese, softened
  • Zest of half a lemon
  • A few sprigs fresh dill, finely chopped
  • 1 tablespoon capers, drained (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt, to taste

Instructions

  1. Rinse the cucumber well and pat dry. Slice into half-inch rounds. Lay slices on a paper towel to drain excess moisture.
  2. In a mixing bowl, combine softened cream cheese with lemon zest, chopped dill (reserve some for garnish), and a pinch of black pepper. Stir until smooth and well incorporated. Adjust seasoning to taste.
  3. Using a small spoon or spreader, dollop about a teaspoon of the cream cheese mixture onto each cucumber slice.
  4. Tear or slice smoked salmon into small pieces and gently place on top of the cream cheese layer.
  5. Garnish each bite with a small caper or two (if using), reserved dill, a tiny pinch of sea salt, and a quick grind of black pepper.
  6. Serve immediately or refrigerate for 15-20 minutes to let flavors meld and keep bites refreshing. Cover loosely with plastic wrap if chilling.

Notes

Pat cucumber slices dry to avoid soggy bites. Use softened cream cheese at room temperature for easy spreading. Handle smoked salmon gently to preserve texture. Assemble just before serving for best freshness. Adjust salt carefully due to salty smoked salmon and capers.
