Easy Sheet Pan Lemon Herb Pork Chops (Best 30-Minute Dinner)

Juicy, golden-brown pork chops and perfectly roasted vegetables come together on a single sheet pan in under 30 minutes. This easy lemon herb recipe is a stress-free weeknight dinner that delivers big flavor with minimal cleanup.

  • 4 boneless pork chops, about 1-inch thick
  • 2 fresh lemons (zest and juice)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 3 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 pound baby potatoes, halved
  • 8 ounces green beans, trimmed
  • Optional garnish: fresh parsley or dill

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper or aluminum foil.
  2. Pat the pork chops dry with paper towels. This helps with browning.
  3. In a small bowl, combine the zest of 1 lemon, juice of 2 lemons, minced garlic, dried oregano, dried thyme, olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper. Whisk until well combined.
  4. Place the pork chops in a shallow dish or resealable bag. Pour about two-thirds of the lemon herb mixture over them, reserving the rest. Turn to coat evenly. Let marinate at room temperature for 10 minutes while prepping vegetables.
  5. On the prepared sheet pan, toss the halved baby potatoes and trimmed green beans with the remaining lemon herb mixture. Spread in a single layer, leaving space in the center for the pork chops.
  6. Place the marinated pork chops in the center of the sheet pan, nestled among the vegetables. Place lemon slices from the second lemon on top of each chop.
  7. Roast for 18-22 minutes, without flipping, until pork chops reach an internal temperature of 145°F (63°C) and potatoes are tender and golden. Green beans should be slightly charred at the edges.
  8. Remove from oven and let rest for 5 minutes. Sprinkle with fresh parsley or dill if desired. Serve immediately.

Notes

For best results, use pork chops at least 1-inch thick. Do not overcrowd the pan—if necessary, use a second pan. Let pork chops rest for 5 minutes after cooking to retain juices. For extra browning, broil for the last 2 minutes, watching closely.
