  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) brown sugar
  • ¾ cup (90g) all-purpose flour
  • ¾ cup (65g) rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract (optional)
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, cold and cubed
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Peel, pit, and slice peaches into ½-inch thick wedges.
  2. Toss peaches with granulated sugar, lemon juice, cornstarch, vanilla extract, and salt. Let sit for 10 minutes.
  3. In a separate bowl, combine flour, rolled oats, brown sugar, and cinnamon. Add cold cubed butter and cut into mixture until coarse crumbs form.
  4. Pour peach mixture into a 9×9-inch baking dish and spread evenly.
  5. Sprinkle oat topping evenly over peaches without pressing down.
  6. Bake for 35 to 40 minutes until topping is golden brown and peach juices bubble. If topping browns too fast, cover loosely with foil and continue baking.
  7. Remove from oven and cool for at least 15 minutes before serving.

Notes

If peaches are extra juicy, add up to 3 tablespoons cornstarch to prevent soggy bottom. Use cold butter for crumbly topping. Cover with foil if topping browns too quickly. Peeling peaches is optional. For gluten-free, substitute flour with almond or gluten-free flour. For dairy-free, replace butter with solid coconut oil.
