  • ½ teaspoon freshly cracked black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the butternut squash into roughly 1-inch pieces.
  3. Separate the garlic cloves from the head, peel them, and leave whole or lightly crush.
  4. In a large mixing bowl, toss the squash and garlic with olive oil, fresh thyme leaves, salt, pepper, and optional smoked paprika or red pepper flakes until evenly coated.
  5. Line a rimmed baking sheet with parchment paper (optional) and spread the mixture out in a single layer without crowding.
  6. Roast in the oven for 30-35 minutes, tossing gently halfway through to promote even browning.
  7. Remove from oven and let cool for a few minutes. Squeeze or mash the roasted garlic cloves into the squash. Adjust seasoning if needed before serving.
