  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup orange bell pepper, finely diced
  • 1/2 cup yellow bell pepper, finely diced
  • 1/2 cup carrots, finely shredded or diced
  • 1/2 cup fresh spinach, finely chopped
  • 1/4 cup purple cabbage, finely shredded
  • 4 large (10-inch) flour tortillas

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the refrigerator about 30 minutes before you start. It needs to be at room temperature so it blends smoothly. If you are in a hurry, you can microwave it for 10-15 seconds, but be careful not to melt it.
  2. Prepare the vegetables: Wash and dry all your vegetables thoroughly. Finely dice the bell peppers and carrots. Finely chop the spinach and shred the purple cabbage. Aim for pieces that are about the size of a small pea.
  3. Pat the vegetables dry: Place the chopped vegetables on a clean kitchen towel or a few layers of paper towels. Gently pat them dry to remove any excess moisture. This prevents the pinwheels from becoming soggy.
  4. Make the ranch filling: In a medium mixing bowl, combine the softened cream cheese, ranch seasoning mix, and sour cream. Stir with a rubber spatula until everything is well combined and smooth. If you are using shredded cheddar cheese, fold it in now.
  5. Fold in the vegetables: Add the dried, chopped vegetables to the cream cheese mixture. Gently fold everything together until the vegetables are evenly distributed.
  6. Prepare the tortillas: Lay one large flour tortilla flat on a clean work surface. Using a rubber spatula, spread about one-quarter of the vegetable-cream cheese mixture evenly over the entire surface of the tortilla. Leave a small border (about half an inch) around the edges.
  7. Roll tightly: Starting at one edge, carefully roll the tortilla into a tight log. Use gentle but firm pressure to keep the roll compact.
  8. Wrap and chill: Once the tortilla is rolled, wrap it tightly in plastic wrap. Repeat with the remaining tortillas. Place the wrapped rolls in the refrigerator for at least 1 hour, or up to 4 hours.
  9. Slice the pinwheels: When you are ready to serve, remove the tortilla rolls from the refrigerator. Unwrap them and place them on a cutting board. Using a sharp serrated knife, slice each roll into 1-inch thick pieces. You should get about 8-10 pinwheels per tortilla.
  10. Arrange and serve: Arrange the pinwheels on a serving platter, cut side up to show off the beautiful rainbow spirals. Serve immediately or keep chilled until ready to serve.
