These Easy Pumpkin Spice Energy Bites are a quick, healthy, and kid-friendly snack perfect for autumn. They combine wholesome ingredients like oats, pumpkin puree, and warm spices for a tasty and nourishing treat.

  • ½ cup pumpkin puree (120ml)
  • ½ cup nut butter (120g) (peanut or almond butter recommended)
  • ¼ cup honey or maple syrup (60ml)
  • 2 tablespoons chia seeds (optional)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • ¼ cup mini chocolate chips (optional, 40g)
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine rolled oats, chia seeds (if using), cinnamon, nutmeg, ground ginger, and salt. Stir well to distribute spices evenly.
  2. Add pumpkin puree, nut butter, honey or maple syrup, and vanilla extract to the dry ingredients. Mix thoroughly with a spatula or spoon until sticky and thick.
  3. Fold in mini chocolate chips if using.
  4. Cover the bowl and refrigerate the mixture for about 20 minutes to make it easier to handle and to meld flavors.
  5. Using hands or a small scoop, form 1-inch (2.5 cm) balls. You should get about 15-18 bites. Place them on a baking sheet or plate lined with parchment paper.
  6. Refrigerate the shaped bites for another 30 minutes to firm up.
  7. Store the energy bites in an airtight container in the refrigerator for up to one week.

Notes

If the mixture feels dry, add a teaspoon of water or more pumpkin puree; if too wet, add more oats. Chilling twice helps the bites hold together better. Use good-quality nut butter for better binding and flavor. Optional add-ins like mini chocolate chips can be omitted for a purely wholesome snack. For nut allergies, substitute nut butter with sunflower seed butter or tahini. These bites can be frozen for up to 3 months; thaw overnight in the fridge before eating.
