Easy Peanut Butter Overnight Protein Oats (35g Protein)

A creamy, protein-packed overnight oats recipe that tastes like comfort but fits into your busy life. With 35 grams of protein per serving, this easy breakfast comes together in just five minutes and keeps you full until lunch.

Ingredients

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk of choice
  • 1/4 cup (60g) Greek yogurt
  • 2 tablespoons (32g) peanut butter
  • 1 tablespoon (15ml) honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 scoop (30g) vanilla or unflavored protein powder
  • 1 tablespoon (12g) chia seeds
  • A pinch of salt

Instructions

  1. Combine the dry ingredients. In your mason jar or container, add the rolled oats, protein powder, chia seeds, and a pinch of salt. Stir them together with a spoon or small whisk.
  2. Add the wet ingredients. Pour in the milk, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Don’t stir yet.
  3. Mix thoroughly. Stir everything together for at least 30 seconds, scraping the bottom and corners of the jar until the peanut butter is fully incorporated and the protein powder is dissolved.
  4. Check the consistency. The mixture should look like a thick, pourable batter. If too thick, add another tablespoon of milk.
  5. Seal and refrigerate. Put the lid on your jar and place it in the fridge for at least 4 hours, but overnight is best (8-12 hours).
  6. Add toppings in the morning. Give the oats a good stir, add a splash of milk if desired, then top with sliced banana, chocolate chips, chopped peanuts, berries, or cinnamon. Eat cold or microwave for 30-60 seconds if preferred.
  7. Enjoy immediately or pack to go.

Notes

For plant-based protein powder, blend the milk and powder together before adding to the oats to prevent clumping. Use room temperature peanut butter for easier mixing. The oats keep in the fridge for up to 5 days; do not freeze.
