  • ½ cup (120ml) milk (dairy or plant-based)
  • 2 tablespoons (32g) creamy natural peanut butter
  • 1 medium ripe banana (about 100g)
  • 1 teaspoon (5ml) maple syrup or honey (optional)
  • Pinch of salt (about ⅛ teaspoon)
  • 1 tablespoon chia seeds (optional)
  • 1 tablespoon flaxseed meal (optional)
  • Sprinkle of cinnamon (optional)

Instructions

  1. Mash the banana: Peel the banana and place it in your jar or bowl. Use a fork to mash it until it’s a smooth, almost liquid paste with no lumps bigger than a pea (about 30 seconds).
  2. Add the peanut butter: Spoon in the peanut butter. If it’s cold and stiff, microwave it for 10 seconds to loosen it up. Stir it into the mashed banana until combined into a uniform tan paste.
  3. Pour in the milk: Add the milk and stir until the banana-peanut butter mixture is fully dissolved. The milk should turn a pale brown color.
  4. Add the oats and salt: Sprinkle in the rolled oats and the pinch of salt. Stir until every oat is coated in the liquid. Scrape the bottom and sides of the jar to make sure nothing is stuck. The mixture should look like a thick, wet porridge.
  5. Optional add-ins: If using chia seeds, flaxseed, or cinnamon, stir them in now.
  6. Cover and refrigerate: Put the lid on the jar and place it in the fridge for at least 4 hours, but overnight (8-12 hours) is ideal.
  7. Serve cold or warm: In the morning, stir well. If too thick, add a splash of milk. Eat cold straight from the jar, or microwave for 45-60 seconds for a warm breakfast. Top with sliced banana, a drizzle of peanut butter, or a sprinkle of granola.

Notes

Mash the banana thoroughly for even sweetness. Use room-temperature peanut butter for easier mixing. The 1:1 ratio of oats to milk is ideal; if adding chia seeds, increase milk by 2 tablespoons. Overnight oats keep in the fridge for up to 3 days, but best within 48 hours. Do not freeze.
