  • 1 cup (240 ml) sweetened condensed milk
  • 1/2 cup (120 ml) boiling water
  • 1 package (3 oz / 85 g) blue raspberry or blueberry flavored gelatin
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • Optional toppings: fresh blueberries, sliced strawberries, whipped cream

Instructions

  1. Prepare the Red Layer: In a mixing bowl, pour 1 cup boiling water over the red gelatin powder. Stir until completely dissolved. Add 1/2 cup cold water and mix well. Pour this mixture evenly into clear cups, filling each about one-third full. Refrigerate for 30 to 40 minutes until firm to the touch but not fully set.
  2. Prepare the White Layer: Sprinkle unflavored gelatin over 1/2 cup cold water and let bloom for 5 minutes. Bring 1/2 cup water to a boil, pour over the bloomed gelatin and stir until dissolved. Stir in 1 cup sweetened condensed milk until smooth. Let cool for about 5 minutes.
  3. Add the White Layer: Carefully pour the white layer over the chilled red layer, filling another one-third of each cup. Refrigerate for 30 to 40 minutes until set but slightly tacky.
  4. Prepare the Blue Layer: Dissolve blue gelatin powder in 1 cup boiling water, stir well, then add 1/2 cup cold water. Let cool to room temperature.
  5. Finish with the Blue Layer: Gently pour the blue gelatin over the white layer until cups are full. Chill for at least 2 hours until firm.
  6. Serving: Garnish with fresh blueberries or a dollop of whipped cream before serving.

Notes

Pour layers slowly and gently over the back of a spoon to keep layers neat and prevent mixing. Ensure each layer is cool enough before adding the next to avoid melting the previous layer. Chill layers fully but avoid freezing to prevent rubbery texture. Let cups sit at room temperature a few minutes before serving to reduce condensation.
