Ingredients

Scale
  • 1 (3 oz / 85 g) package red gelatin powder (e.g., cherry flavor)
  • 1 (3 oz / 85 g) package unflavored gelatin powder (or flavored like coconut) for white layer
  • 1 (3 oz / 85 g) package blue gelatin powder (e.g., blue raspberry flavor)
  • 1 cup (240 ml) boiling water for red layer
  • 1/2 cup (120 ml) boiling water for white layer
  • 1 cup (240 ml) boiling water for blue layer
  • 1/4 cup (60 ml) cold water for red layer
  • 1/4 cup (60 ml) cold water for blue layer
  • 1/4 cup (60 ml) cold water for white layer
  • 1/2 cup (120 ml) sweetened condensed milk for white layer (dairy-free alternative optional)
  • 1/2 cup (120 ml) vodka or rum total, divided equally among layers (can substitute with sparkling water or lemon-lime soda for non-alcoholic version)
  • About 30 mini plastic cups or silicone molds for serving

Instructions

  1. Prepare the Red Layer: In a medium bowl, dissolve 1 package red gelatin powder in 1 cup boiling water, stirring for about 2 minutes until fully dissolved.
  2. Add 1/4 cup cold water and 1/6 cup (40 ml) vodka or rum to the red gelatin mixture. Let cool to room temperature (about 15 minutes) but do not let it set.
  3. Pour the red gelatin mixture into mini cups, filling each about one-third full. Refrigerate for 30 minutes or until firm to the touch.
  4. Prepare the White Layer: In a clean bowl, dissolve 1 package unflavored gelatin in 1/2 cup boiling water.
  5. Stir in 1/2 cup sweetened condensed milk, 1/4 cup cold water, and 1/6 cup (40 ml) vodka or rum. Mix well and let cool to room temperature (about 15 minutes).
  6. Once the red layer is firm, slowly pour the white mixture over the back of a spoon to avoid disturbing the red layer, filling cups to two-thirds full. Refrigerate for 30 minutes until set.
  7. Prepare the Blue Layer: Dissolve 1 package blue gelatin powder in 1 cup boiling water, stirring thoroughly.
  8. Add 1/4 cup cold water and 1/6 cup (40 ml) vodka or rum. Cool to room temperature.
  9. Gently layer the blue gelatin on top of the white layer by pouring over the back of a spoon to keep layers distinct. Fill to the top.
  10. Refrigerate for at least 2 hours until fully set.
  11. Serve chilled directly from the cups. Optionally, chill cups briefly in warm water for easier removal.

Notes

Cool each gelatin mixture to room temperature before layering to prevent melting the previous layer. Pour layers slowly over the back of a spoon for clean separation. Chill each layer thoroughly before adding the next. Alcohol helps keep gelatin from setting too hard but can be omitted or replaced with sparkling water for a kid-friendly version. Prepare up to 3 days ahead for best flavor. Avoid freezing as it ruins texture.
