Easy One-Pan Honey Garlic Chicken and Vegetables

A quick and easy one-pan recipe featuring bone-in, skin-on chicken thighs roasted with a sweet and savory honey garlic glaze and colorful vegetables. Perfect for busy weeknights and crowd-pleasing dinners.

  • 4 bone-in, skin-on chicken thighs
  • 3 cloves fresh garlic, minced
  • 1/4 cup (85g) honey
  • 3 tablespoons (45ml) soy sauce (or tamari for gluten-free)
  • 2 tablespoons (30ml) olive oil or avocado oil
  • 2 cups (300g) baby carrots
  • 1 cup (150g) snap peas
  • 1 cup (150g) chopped red bell peppers
  • Salt and pepper to taste
  • Fresh parsley or thyme, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, soy sauce, and minced garlic to prepare the honey garlic sauce. Set aside.
  3. Pat chicken thighs dry with paper towels and season both sides with salt and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken skin-side down and sear for 5-7 minutes until golden brown and crispy. Flip and cook for another 3-4 minutes.
  5. Nestle baby carrots, snap peas, and chopped red bell peppers around the chicken in the skillet. Season vegetables with salt and pepper.
  6. Pour the honey garlic sauce evenly over the chicken and vegetables, basting the chicken skin lightly.
  7. Transfer the skillet to the preheated oven and roast uncovered for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender but still vibrant.
  8. Remove from oven and let rest for 5 minutes to allow the sauce to thicken and coat the chicken and vegetables.
  9. Garnish with fresh parsley or thyme if desired, then serve.

Patting the chicken dry before searing is essential for crispy skin. If the sauce thickens too much during roasting, add a splash of water or chicken broth to loosen it. Keep an eye on vegetables to avoid overcooking; add earlier if you prefer softer veggies. For leftovers, reheat gently in a skillet to maintain crispy skin; avoid microwaving.
