  • ½ cup (170g) honey
  • ⅓ cup (60g) mini chocolate chips (semi-sweet recommended)
  • ¼ cup (30g) ground flaxseed
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt (optional, skip if peanut butter is salted)

Instructions

  1. In a large mixing bowl, combine 2 cups old-fashioned rolled oats, ¼ cup ground flaxseed, and a pinch of salt. Stir to distribute evenly.
  2. Add 1 cup creamy peanut butter, ½ cup honey, and 1 teaspoon vanilla extract. Mix thoroughly with a spatula or wooden spoon until no dry oats remain and everything is evenly coated (about 2 minutes).
  3. Fold in ⅓ cup mini chocolate chips gently until evenly distributed. If mixture feels too warm, refrigerate for 5 minutes before continuing.
  4. Cover the bowl and refrigerate for 15-20 minutes to firm up the mixture.
  5. Line a baking sheet or large plate with parchment paper. Using a cookie scoop or tablespoon, scoop out portions and roll into 1-inch balls (about 20-24 bites). Wet hands lightly with water or oil to prevent sticking.
