These easy no-bake peanut butter oat bars with chocolate drizzle are a quick, wholesome snack that requires no oven and comes together in under 15 minutes. They offer a chewy texture with a rich peanut butter flavor and a silky chocolate finish.

  • 1 cup natural peanut butter (250g), creamy or chunky
  • 1/2 cup honey (120ml)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips (90g)
  • 1 teaspoon vegetable oil

Instructions

  1. Line an 8×8-inch pan with parchment paper, leaving some overhang for easy removal.
  2. Combine peanut butter and honey in a medium mixing bowl. Warm slightly in the microwave (15-20 seconds) if needed to blend smoothly. Stir in vanilla extract and salt until well mixed (3-5 minutes).
  3. Add rolled oats to the peanut butter mixture and fold gently but thoroughly until oats are evenly coated and mixture is thick and sticky. Add a teaspoon of honey or peanut butter if too dry.
  4. Transfer the oat mixture to the prepared pan and press firmly and evenly using hands or a spatula (about 3 minutes).
  5. Melt chocolate chips with vegetable oil in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth (2-3 minutes). Alternatively, melt using a double boiler on low heat.
  6. Drizzle the melted chocolate evenly over the pressed oat mixture using a spoon or fork to create thin lines or a zigzag pattern.
  7. Chill the bars in the refrigerator for at least 1 hour to set. Alternatively, chill in the freezer for 30 minutes, watching to prevent chocolate cracking.
  8. Once set, lift the bars out using the parchment paper overhang and cut into 12 squares or rectangles with a sharp knife. Warm the knife blade under hot water and dry before slicing for cleaner cuts.

Notes

Warm peanut butter and honey slightly for easier mixing. Press mixture firmly to prevent crumbling. Use old-fashioned rolled oats for best texture. Add a teaspoon of vegetable oil to chocolate for a glossy drizzle. Store bars refrigerated up to one week or freeze up to 3 months. For vegan version, substitute honey with maple or agave syrup and use dairy-free chocolate chips.
