These no-bake energy bites combine creamy peanut butter and rich cocoa powder for a quick, nutritious, and delicious snack that’s perfect for any occasion.

  • 1 cup (90g) rolled oats (old-fashioned preferred)
  • ½ cup (125g) natural peanut butter (creamy or chunky)
  • ⅓ cup (80ml) honey or maple syrup
  • ¼ cup (25g) unsweetened cocoa powder
  • 2 tablespoons chia seeds (optional)
  • 1 teaspoon vanilla extract
  • ¼ cup mini dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. If desired, pulse 1 cup (90g) rolled oats in a food processor for 10-15 seconds until coarsely ground but not powdery.
  2. In a mixing bowl, combine ½ cup (125g) natural peanut butter, ⅓ cup (80ml) honey or maple syrup, and 1 teaspoon vanilla extract. Stir until smooth and well blended.
  3. Add the oats, ¼ cup (25g) cocoa powder, 2 tablespoons chia seeds (if using), and a pinch of salt to the peanut butter mixture. Stir gently to combine until the mixture thickens and sticks together.
  4. Fold in ¼ cup mini dark chocolate chips evenly through the batter.
  5. Using hands or a small cookie scoop, roll the mixture into 1-inch (2.5 cm) balls, making roughly 15-18 bites.
  6. Place the bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  7. Transfer chilled bites to an airtight container and store in the refrigerator for up to one week or freeze for longer storage.

Notes

If the mixture is too sticky, add more oats or chia seeds; if too crumbly, add more peanut butter or honey. Lightly wet hands before rolling to prevent sticking. For vegan version, use maple syrup instead of honey and dairy-free chocolate chips. Store refrigerated for up to a week or freeze for up to 3 months.
