Easy Mini Football Sausage Rolls: Perfect Tailgating Snack

These adorable mini football-shaped sausage rolls are the ultimate tailgating snack. Made with flaky puff pastry and savory sausage, they’re fun, handheld, and completely unpretentious—perfect for game day gatherings.

  • 1 package (17.3 oz / 490g) puff pastry sheets, thawed
  • 1 lb (450g) ground pork sausage (breakfast or Italian, casings removed)
  • 1 large egg (for egg wash)
  • 2 tablespoons everything bagel seasoning (optional)
  • Flour (for dusting)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Lightly flour your work surface. Unfold one sheet of puff pastry and roll it out slightly to smooth the creases, forming about a 10×10-inch square.
  3. Using a sharp knife or pizza cutter, cut the pastry sheet into 4 equal strips, each about 2.5 inches wide.
  4. Divide the 1 lb of sausage into 4 equal portions. Roll each portion into a log roughly the same length as the pastry strips.
  5. Place one sausage log along the center of each pastry strip. Brush a little egg wash along one long edge of the pastry. Roll the pastry over the sausage, starting from the opposite edge, and press gently to seal. Place seam-side down.
  6. Using a sharp knife, cut each long roll into 4 equal pieces (16 mini rolls total). Gently pinch and taper the ends of each piece to create a football shape, keeping the middle plump.
  7. Arrange the shaped footballs seam-side down on the prepared baking sheet, leaving about an inch of space between each.
  8. Brush each football with the beaten egg, covering tops and sides evenly.
  9. Sprinkle everything bagel seasoning generously over the top of each football.
  10. Bake for 18-22 minutes, or until the pastry is puffed and deeply golden brown and the sausage is cooked through.
  11. Let the footballs cool on the baking sheet for about 5 minutes before transferring to a serving platter.

Notes

Keep puff pastry cold for best flakiness. If pastry gets too warm, refrigerate for 10 minutes. Seal seams well to prevent sausage from leaking. For make-ahead, assemble up to 24 hours in advance and refrigerate; add 2-3 minutes to baking time if baking from cold. Freeze baked rolls for up to 2 months.
