Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano (optional)
  • ½ cup mayonnaise
  • 2 tablespoons lemon juice (fresh squeezed)
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 4 wide-mouth mason jars (16 oz or 32 oz)
  • 1 large head romaine lettuce, chopped (about 6 cups)
  • 1 cup croutons
  • ¼ cup shaved Parmesan cheese
  • Optional: 1 lemon, cut into wedges for serving

Instructions

  1. Season both sides of the chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and oregano.
  2. Heat a large skillet over medium-high heat. Cook the chicken for 6-7 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F). Let the chicken rest for 5 minutes before slicing into bite-sized pieces.
  3. In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, minced garlic, grated Parmesan, olive oil, and Worcestershire sauce. Season with salt and pepper to taste.
  4. Wash and thoroughly dry the romaine lettuce. Chop it into bite-sized pieces.
  5. Layer the jars in this exact order from bottom to top: dressing (about 3 tablespoons per jar), sliced chicken, croutons, shaved Parmesan, and chopped romaine lettuce packed on top.
  6. Screw the lids on tightly. Store the jars in the refrigerator for up to 5 days.
  7. When ready to eat, shake the jar vigorously to combine everything, or dump the contents into a bowl and toss.

Notes

Don’t skip the layering order—dressing at the bottom, then chicken, croutons, Parmesan, and lettuce on top. Make sure lettuce is thoroughly dried to prevent sogginess. The flavors meld beautifully after a day or two; Day 2 is often better than Day 1. For best results, let chicken rest 5 minutes before slicing to keep it juicy.
