  • ¼ cup (60 ml) plain full-fat Greek yogurt
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ⅓ cup (35 g) panko breadcrumbs (can substitute gluten-free breadcrumbs)
  • 1 large egg (room temperature)
  • 2 cups cooked quinoa or brown rice (about ½ cup dry)
  • 2 cups baby spinach or mixed greens
  • 1 small cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small avocado, sliced
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • ½ tsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat your pan or oven: If pan-frying, heat a large skillet over medium heat with a tablespoon of olive oil. For baking, preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, Greek yogurt, minced garlic, chopped parsley, onion powder, smoked paprika, salt, black pepper, panko breadcrumbs, and egg. Mix gently until just combined.
  3. Roll the mixture into 1-inch (2.5 cm) meatballs, about 18-20 total, keeping them uniform in size.
  4. Cook the meatballs: For pan-frying, add meatballs to the hot skillet in a single layer and cook for 8-10 minutes, turning occasionally, until golden brown and cooked through (internal temp 165°F / 74°C). For baking, place meatballs on a parchment-lined baking sheet and bake for 15-18 minutes, turning halfway.
  5. While meatballs cook, rinse quinoa or brown rice and cook according to package instructions (about 15 minutes for quinoa, 40-45 minutes for brown rice). Fluff with a fork when done.
  6. Prep the veggies: dice cucumber, halve cherry tomatoes, slice avocado, and roughly chop or toss the greens.
  7. Make the dressing by whisking together lemon juice, olive oil, Dijon mustard, honey or maple syrup, and salt and pepper to taste.
  8. Assemble the bowls by dividing cooked quinoa or rice into bowls, topping with greens, veggies, and turkey meatballs. Drizzle dressing over the top just before serving.
  9. Taste and adjust seasoning if needed. Serve warm.

Notes

Do not overmix the turkey mixture to keep meatballs tender. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C). For moister meatballs, add a splash of broth or cover the pan briefly while cooking. You can bake or pan-fry the meatballs; baking reduces oil use. For dairy-free, substitute Greek yogurt with coconut yogurt and use gluten-free breadcrumbs. Leftovers keep well refrigerated for up to 3 days or frozen for 2 months.
