Instructions

  1. Rinse 4 cups (600 grams) of fresh strawberries under cold water. Hull and chop into roughly half-inch chunks. (10 minutes)
  2. In a medium bowl, combine the chopped strawberries with 1 cup (200 grams) granulated sugar. Stir gently but thoroughly to coat all the berries. (5 minutes)
  3. Stir in 2 tablespoons (30 ml) fresh lemon juice. Add 1 teaspoon vanilla extract if using. (2 minutes)
  4. Use a potato masher or fork to gently crush the berries to your desired consistency, leaving some texture. (3 minutes)
  5. Pour the mixture into a clean glass jar or airtight container. Cover tightly and refrigerate for at least 4 hours, preferably overnight, to thicken naturally. (4+ hours)

Notes

Do not over-mash the berries to maintain texture. Use fresh, firm strawberries for best results. Allow jam to chill for at least 4 hours or overnight for optimal thickness. Stir before serving if juices separate. Sterilize jars to prevent fermentation. Can reduce sugar by 25% or substitute with coconut sugar or honey (texture may vary).
