  • 1/3 cup packed brown sugar
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour

  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, pit, and slice 4-5 medium peaches into roughly 1/2-inch thick slices. Toss them gently in a bowl with 1/4 cup granulated sugar, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract if using. Set aside for 10 minutes to macerate.
  3. In a separate bowl, combine 1 cup rolled oats, 3/4 cup all-purpose flour, 1/3 cup brown sugar, 1 teaspoon ground cinnamon, and a pinch of salt. Add 1/2 cup cold, cubed unsalted butter. Using a pastry cutter or your fingertips, mix the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Pour the peach mixture into your baking dish, spreading it out evenly. Evenly sprinkle the oat topping over the peaches, covering the fruit but leaving some gaps.
  5. Bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly and fragrant. Tent with foil if topping browns too quickly.
  6. Let the peach crisp rest for 10-15 minutes before serving.

Notes

Use cold butter for a crumbly topping. Peeling peaches is recommended for best texture. Frozen peaches can be used but reduce sugar slightly. Tent with foil if topping browns too fast.
