  • Garlic Parmesan Mix: 2 tbsp grated Parmesan cheese, 1 tsp garlic powder, 1 tbsp chopped fresh parsley (or 1 tsp dried), salt & pepper
  • Vegetables:
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced into half-moons
  • 1 small red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • Optional: Fresh parsley or basil for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line your sheet pan with parchment paper if desired.
  2. Pat chicken breasts dry with paper towels. Cut a shallow slit about ½ inch deep in the thickest part if needed for even cooking.

  7. – Garlic Parmesan Mix: Toss grated Parmesan, garlic powder, parsley, salt, pepper, and ½ tbsp olive oil.
  8. Coat each chicken breast with one marinade. Place spaced apart on the sheet pan to avoid flavor blending. Let marinate about 10 minutes (or refrigerate up to 24 hours).
  9. Toss all chopped veggies in a bowl with a drizzle of olive oil, salt, and pepper. Spread evenly around the chicken breasts on the sheet pan.
  10. Roast in the oven for 20-25 minutes until chicken reaches 165°F (74°C) and veggies are tender and lightly caramelized.
