This recipe delivers crispy honey mustard glazed salmon with roasted asparagus, combining sweet-tangy flavors and satisfying textures for a quick and elegant dinner.

  • 4 skin-on salmon fillets (6 oz / 170 g each), fresh and preferably wild-caught
  • 1 bunch asparagus (about 1 lb / 450 g), trimmed
  • 2 tablespoons honey (raw honey preferred)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste (kosher salt recommended)
  • Optional: red pepper flakes for heat
  • Optional: fresh parsley for garnish

Instructions

  1. Pat the salmon fillets dry with paper towels to remove excess moisture. Season both sides with salt and pepper. Let salmon sit at room temperature for 10 minutes before cooking.
  2. In a small bowl, whisk together honey, Dijon mustard, minced garlic, and lemon juice until smooth. Set aside.
  3. Trim the woody ends off the asparagus. Toss asparagus in 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet if roasting.
  4. Heat 1 tablespoon olive oil in a cast-iron skillet over medium-high heat until shimmering but not smoking (about 2-3 minutes). Place salmon fillets skin-side down. Press gently with a spatula to keep skin flat. Cook for 5-6 minutes without moving until skin is golden and crispy.
  5. Carefully flip fillets and immediately brush the tops with the honey mustard glaze. Cook for another 2-3 minutes or until salmon is just cooked through (internal temperature 125°F / 52°C for medium-rare). If glaze begins to burn, reduce heat slightly.
  6. While salmon cooks, roast asparagus in a preheated oven at 425°F (220°C) for 10-12 minutes, or until tender and slightly caramelized. Alternatively, add asparagus to the skillet after flipping salmon and cook until tender.
  7. Remove salmon and asparagus from heat. Spoon any remaining glaze from the pan over salmon. Garnish with fresh lemon wedges or chopped parsley if desired.

Notes

Pat salmon skin dry thoroughly before cooking to ensure crispiness. Apply honey mustard glaze only after flipping salmon to prevent burning. If glaze starts to burn, reduce heat. Let salmon rest at room temperature before cooking for even cooking. Roasting asparagus at high heat caramelizes natural sugars for better flavor. Use a fish spatula for easier flipping of delicate fillets.
