  • 1 pound (450g) fresh apricots, pitted and chopped
  • 3/4 cup (150g) granulated sugar
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 whole vanilla bean, split and seeds scraped
  • 23 tablespoons (30-45ml) water (optional)

Instructions

  1. Wash, pit, and chop about 1 pound (450g) of fresh apricots into roughly ½-inch pieces.
  2. Split 1 vanilla bean lengthwise with a sharp knife and scrape out the seeds with the back of the knife. Set both seeds and pod aside.
  3. In a small heavy-bottomed saucepan, add the chopped apricots, granulated sugar, lemon juice, vanilla seeds, and the empty vanilla pod. If apricots seem dry, add 2-3 tablespoons of water.
  4. Place the saucepan over medium heat and stir gently until the sugar dissolves and the mixture begins to bubble, about 5 minutes.
  5. Reduce heat to low and let it simmer gently, stirring occasionally, for about 25-30 minutes until the jam thickens and the fruit breaks down.
  6. Test the consistency by placing a small spoonful on a chilled plate; if it wrinkles and thickens, it’s ready. If not, cook a few minutes longer and test again.
  7. Remove the vanilla pod and discard.
  8. Pour the hot jam into clean glass jars, leaving about ¼ inch of headspace. Let cool to room temperature before sealing.
  9. Refrigerate and use within two weeks.

Notes

Use ripe but firm apricots for best texture. Stir frequently to prevent sticking or burning. Test jam set with chilled plate. Vanilla bean pod can be rinsed and dried for later use in sugar infusion. Let jam cool uncovered before sealing to avoid condensation. Refrigerate and consume within two weeks or freeze for longer storage.
