This Easy Apple Cider Mimosa with Cinnamon Sugar Rim is a happy accident turned fall favorite. It’s a quick, five-minute cocktail that combines apple cider, Prosecco, and a cinnamon sugar rim for a crisp, sweet, and bubbly drink perfect for any autumn gathering.

  • 4 ounces (120 ml) chilled apple cider
  • 2 ounces (60 ml) chilled Prosecco or Champagne
  • 1 ounce (30 ml) bourbon or whiskey (optional)
  • Ice (optional)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • Apple slices for garnish (optional)
  • Cinnamon sticks for garnish (optional)

Instructions

  1. Prepare the Cinnamon Sugar Rim: In a small shallow dish, mix the granulated sugar and ground cinnamon together. In another small dish, pour the honey or maple syrup. Dip the rim of a chilled glass into the honey, then into the cinnamon sugar mixture, pressing gently to coat evenly. Set aside.
  2. Add the Apple Cider: Pour 4 ounces (120 ml) of chilled apple cider into the prepared glass.
  3. Add the Bourbon (Optional): If using, pour 1 ounce (30 ml) of bourbon into the glass and stir gently.
  4. Top with Prosecco: Slowly pour 2 ounces (60 ml) of chilled Prosecco or Champagne down the side of the glass to preserve the bubbles.
  5. Garnish and Serve: Add a thin apple slice to the rim or drop it into the drink. Add a cinnamon stick if desired. Serve immediately.

Notes

Chill all ingredients and glasses for best results. The cinnamon sugar rim is essential for flavor. For a non-alcoholic version, substitute Prosecco with sparkling apple cider or ginger ale. The drink is best served immediately; do not store after adding Prosecco.
