Easy 6 Light & Fluffy Pumpkin Banana Muffins Recipe

These light and fluffy pumpkin banana muffins are quick, easy, and made with simple ingredients. Perfect for fall mornings or any time you crave a cozy, crowd-pleasing treat.

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/2 cup pumpkin puree (100% pure pumpkin)
  • 1 medium ripe banana, mashed (about 1/3 cup)
  • 1/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Optional: 1/3 cup chocolate chips or chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a 6-cup muffin tin with paper liners or grease lightly.
  2. In a small bowl, mash the ripe banana with a fork until mostly smooth with a few small lumps. Set aside.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt for about 15 seconds.
  4. In a separate larger bowl, whisk together pumpkin puree, mashed banana, brown sugar, granulated sugar, vegetable oil, egg, and vanilla extract until smooth and glossy.
  5. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula using 10 to 12 strokes max—batter should still have a few streaks of flour.
  6. If using chocolate chips or walnuts, sprinkle over batter and fold 2-3 more times just until distributed.
  7. Divide batter evenly among the 6 muffin cups, filling each about 3/4 full.
  8. Bake for 15 to 18 minutes. Check at 15 minutes by inserting a toothpick into the center—if it comes out clean or with a few moist crumbs, they’re done.
  9. Let muffins cool in the tin for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Don’t overmix the batter—overmixing develops gluten and makes muffins tough. Use room temperature ingredients for best results. Check pumpkin puree for wateriness and blot if needed. Let muffins cool in the tin for 5 minutes before transferring to a rack.
