  • ½ cup heavy cream (optional)
  • Salt and black pepper to taste
  • Optional garnishes: fresh parsley, chopped green onions, shredded cheddar cheese

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, slice the sausage into ½-inch rounds, and cube the potatoes into ½-inch pieces.
  2. Heat a large Dutch oven over medium-high heat. Add the sliced sausage in a single layer and cook undisturbed for 2-3 minutes until deeply browned. Flip and cook another 2-3 minutes. Remove sausage with a slotted spoon and set aside, leaving about 1 tablespoon of rendered fat in the pot.
  3. Reduce heat to medium. Add the diced onion to the pot and cook, stirring occasionally, until translucent and starting to brown, about 3 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Pour in about ¼ cup of the chicken broth and scrape the bottom of the pot with a wooden spoon to deglaze, lifting the browned bits.
  5. Add the cubed potatoes and remaining chicken broth. Season with ½ teaspoon salt and ¼ teaspoon pepper. Bring to a boil, then reduce heat to maintain a gentle simmer. Cover and cook for 15-18 minutes until potatoes are fork-tender.
  6. Use a potato masher or the back of a wooden spoon to gently mash about half the potatoes in the pot to thicken the broth.
  7. Stir in the heavy cream (if using) and return the browned sausage to the pot. Simmer for 2-3 minutes to warm through. Taste and adjust seasoning.
  8. Ladle into bowls and garnish with fresh parsley, green onions, or shredded cheese if desired.

Notes

For a dairy-free version, skip the cream or use full-fat coconut milk. For a lighter option, use turkey smoked sausage and skip the cream. The soup thickens as it sits; add extra broth when reheating if needed. To prevent oversalting, use low-sodium broth and taste before adding extra salt.
