Ingredients

Scale
  • 1.5 pounds (680 grams) boneless, skinless chicken breasts
  • 1 cup (240 ml) salsa (e.g., Pace)
  • 1 tablespoon (7 grams) chili powder
  • 1 teaspoon (3 grams) cumin
  • 1 teaspoon (3 grams) garlic powder
  • 1/2 teaspoon (1.5 grams) onion powder
  • 1 teaspoon (6 grams) salt
  • 1/2 teaspoon (1 gram) black pepper
  • 1/2 cup (120 ml) chicken broth
  • 8 to 10 corn or flour tortillas
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, fresh cilantro, lime wedges

Instructions

  1. Place the chicken breasts in the bottom of the crockpot in a single layer.
  2. In a small bowl, combine chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Stir until evenly mixed.
  3. Sprinkle the spice mixture evenly over the chicken breasts and rub it in with your hands.
  4. Pour the salsa and chicken broth over the seasoned chicken. Do not stir.
  5. Set the crockpot to high and cook for 25 to 30 minutes, until the chicken is cooked through and fork-tender.
  6. Using two forks, shred the chicken right in the crockpot. Stir the shredded chicken into the cooking liquid.
  7. While the chicken cooks, warm the tortillas in a dry skillet over medium-high heat for about 30 seconds per side, until slightly charred and pliable. Stack and cover with a clean kitchen towel.
  8. Prepare toppings: dice tomatoes, shred lettuce, grate cheese, chop cilantro. Set out in small bowls.
  9. Assemble tacos: spoon shredded chicken onto warm tortillas and top with desired fixings. Squeeze fresh lime juice over everything before serving.

Notes

Don’t overcook the chicken; 30 minutes on high is plenty. Use a meat thermometer to ensure chicken reaches 165°F. Shred the chicken while it’s still warm for best texture. Double the batch for leftovers. For a spicier version, add cayenne pepper or a diced chipotle pepper in adobo sauce.
