Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk or half-and-half
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste (start with 1 teaspoon salt and 1/2 teaspoon pepper)
  • 2 cups cooked, shredded chicken (rotisserie chicken recommended)
  • 1 tablespoon olive oil (if using raw chicken breasts)
  • 1 can (16.3 ounces) refrigerated buttermilk biscuits (Pillsbury Grands recommended)
  • 1 tablespoon melted butter (optional, for brushing)

Instructions

  1. Melt the butter in a Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, for about 5 minutes until softened and onions are translucent.
  2. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Sprinkle the flour over the vegetables and stir constantly for about 1 minute to create a roux.
  4. Slowly pour in the chicken broth while whisking or stirring vigorously to prevent lumps.
  5. Add the milk, thyme, rosemary, salt, and pepper. Stir and bring to a gentle simmer. Cook for 3-4 minutes until thickened.
  6. Stir in the shredded chicken and let it warm through for about 2 minutes.
  7. Open the can of biscuits and separate them. Pinch off pieces about the size of a walnut (roughly 1-inch pieces) and drop each piece directly into the simmering broth.
  8. Gently push the dumplings down into the broth with the back of a spoon. Cover the pot with a tight-fitting lid and reduce heat to low.
  9. Cook for 10-12 minutes without lifting the lid.
  10. Remove the lid and check the dumplings. They should be puffed up and cooked through. If needed, cover and cook for another 2-3 minutes.
  11. Stir in the melted butter if using, and adjust salt and pepper to taste.
  12. Ladle into bowls, ensuring each serving gets a good mix of dumplings, chicken, and vegetables. Garnish with fresh parsley if desired.

Notes

Don’t overwork the dumplings; handle them as little as possible. Keep the broth at a gentle simmer, not a boil. Resist the urge to stir once dumplings are added. Season the broth generously as dumplings absorb salt. Make extra broth if planning for leftovers as dumplings will absorb liquid.
