Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups granulated sugar
  • ½ cup packed brown sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 cup semi-sweet or dark chocolate chips
  • ½ cup heavy cream
  • 6 ounces dark chocolate, finely chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving a slight overhang for easy removal.
  2. Melt the butter gently in a microwave-safe bowl or over a double boiler until fully liquefied. Let it cool slightly.
  3. Whisk together the granulated sugar, brown sugar, and eggs in a large mixing bowl. Beat vigorously for 2-3 minutes until pale and slightly thickened.
  4. Stir in the melted butter and vanilla extract to the sugar-egg mixture, blending well but not overmixing.
  5. In a separate bowl, sift together the flour, cocoa powder, and salt.
  6. Fold the dry ingredients gently into the wet mixture using a spatula until no streaks of flour remain.
  7. Stir in the chocolate chips evenly, reserving a handful for topping if desired.
  8. Pour the batter into the prepared pan and smooth the top with a spatula.
  9. Bake for 25-30 minutes until the edges look set but the center still slightly wobbles when the pan is gently shaken.
  10. While the brownies bake, heat the heavy cream in a small saucepan until just simmering, then pour over the chopped dark chocolate in a heatproof bowl. Let sit for 2 minutes, then stir until smooth and glossy.
  11. When brownies come out of the oven, immediately pour the ganache over the top and spread evenly. Sprinkle reserved chocolate chips or flaky sea salt if desired.
  12. Let the brownies cool completely on a wire rack, then refrigerate for at least one hour to allow the ganache to set fully.
  13. Use the parchment overhang to lift the brownies out of the pan and cut into squares with a sharp knife, wiping the blade between cuts for clean edges.

Notes

Do not overmix the batter to keep brownies tender. Use room temperature eggs for better incorporation. Choose high-quality chocolate for best flavor. Watch baking time closely; the center should wobble slightly but not be runny. Heat cream just to simmering for ganache to avoid seizing. Cool brownies fully before cutting to prevent crumbling. Ganache can be smoothed with a warm water bath or brief microwave if grainy. For a firmer crumb, add an extra tablespoon of flour next time.
