Decadent Whiskey Chocolate Layer Cake with Salted Caramel Frosting

A rich and comforting chocolate layer cake infused with whiskey and topped with a salted caramel frosting, perfect for celebrations or indulgent treats.

Ingredients

  • All-purpose flour – 2 ½ cups (315g)
  • Unsweetened cocoa powder – ¾ cup (75g), sifted
  • Baking powder – 1 ½ teaspoons
  • Baking soda – 1 ½ teaspoons
  • Salt – 1 teaspoon
  • Granulated sugar – 2 cups (400g)
  • Large eggs – 3, at room temperature
  • Whole milk – 1 cup (240ml)
  • Vegetable oil – ½ cup (120ml)
  • Vanilla extract – 2 teaspoons
  • Whiskey – ½ cup (120ml)
  • Boiling water – 1 cup (240ml)
  • Unsalted butter – 1 cup (225g), softened
  • Powdered sugar – 4 cups (480g), sifted
  • Salted caramel sauce – ½ cup (125ml)
  • Heavy cream – 2 tablespoons (30ml)
  • Sea salt flakes – 1 teaspoon
  • Whiskey – 2 tablespoons (30ml)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pans, then line the bottom with parchment paper.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, combine sugar, eggs, milk, vegetable oil, and vanilla extract. Beat until smooth and pale, about 3 minutes.
  4. Stir in the whiskey carefully, making sure it’s fully mixed.
  5. Slowly pour the boiling water into the wet mixture while stirring continuously.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula. Do not overmix.
  7. Divide the batter evenly between the two prepared pans. Tap pans gently to release air bubbles.
  8. Bake for 30-35 minutes. Check doneness with a toothpick; it should come out mostly clean with a few moist crumbs.
  9. Let cakes cool in pans for 15 minutes, then transfer to cooling racks to cool completely.
  10. Beat softened butter until creamy, about 3 minutes. Gradually add powdered sugar, alternating with salted caramel sauce and heavy cream, mixing well after each addition.
  11. Add whiskey and sprinkle sea salt flakes, beating until smooth and fluffy. Adjust saltiness if needed.
  12. Place one cake layer on a serving plate. Spread a generous layer of frosting on top, then place the second cake layer.
  13. Cover the entire cake with remaining frosting, smoothing or swirling for texture. Sprinkle a pinch of sea salt on top.
  14. Refrigerate the cake for at least 30 minutes to set the frosting. Bring out 15 minutes before serving.

Notes

Use room temperature eggs and milk for a smoother batter. Bloom cocoa powder with boiling water for intense chocolate flavor. Use good quality whiskey for best taste. Chill frosting if too soft and whip again before frosting. Avoid overmixing batter to keep cake tender.
