  • 2 tablespoons bourbon
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • 1 ½ cups chopped pecans, toasted (180g)
  • ¾ cup bittersweet chocolate chips (130g)

Instructions

  1. Prepare the crust: In a medium bowl, combine 1 ½ cups all-purpose flour, 2 tablespoons granulated sugar, and ¼ teaspoon salt. Add the cold, cubed unsalted butter. Use a food processor or pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.   3. Make the filling: In a large mixing bowl, whisk together 3 large eggs, 1 cup light brown sugar, and ½ cup melted unsalted butter until smooth and slightly thickened. Stir in 2 tablespoons bourbon, 1 teaspoon pure vanilla extract, and ½ teaspoon salt. Fold in ¾ cup bittersweet chocolate chips and 1 ½ cups chopped pecans gently, reserving a handful of pecans for topping.
  4. Assemble and bake: Pour the filling evenly over the chilled crust. Sprinkle the reserved pecans on top. Bake for 35-40 minutes, or until the filling is set but still slightly jiggly in the center. A toothpick inserted near the center should come out mostly clean with a few moist crumbs.
  5. Cool completely: Remove the bars from the oven and allow them to cool to room temperature. Then transfer to the fridge for at least 2 hours to set fully.
