This crispy maple roasted delicata squash is a simple, 30-minute side dish with caramelized edges and a tender center. Made with just five ingredients, it’s perfect for busy weeknights or holiday dinners.

  • 2 medium delicata squash
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Optional garnishes: fresh thyme leaves, flaky sea salt, red pepper flakes

Instructions

  1. Preheat your oven to 425°F (218°C). Line a large sheet pan with parchment paper or a silicone baking mat.
  2. Wash the delicata squash thoroughly and pat dry. Trim off both ends, then slice in half lengthwise. Scoop out the seeds and stringy pulp.
  3. Place each half cut-side down and slice crosswise into ½-inch thick half-moons.
  4. In a medium mixing bowl, whisk together maple syrup, olive oil, kosher salt, and black pepper. Add the squash slices and toss gently until evenly coated.
  5. Arrange the squash slices in a single layer on the prepared baking sheet, making sure they are not touching.
  6. Roast for 15 minutes. Remove from the oven, flip each slice using tongs or a spatula, and return to the oven.
  7. Roast for another 10-15 minutes, until the edges are deep golden brown and crispy, and the flesh is tender when pierced with a fork.
  8. Serve immediately, optionally garnished with fresh thyme, flaky sea salt, or red pepper flakes.

Notes

For best results, do not overcrowd the pan—squash needs space to roast, not steam. Pat squash dry before adding maple mixture to ensure crispiness. If your oven runs cool, increase temperature to 450°F for the last 5 minutes. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in a 400°F oven for 5-7 minutes or in an air fryer at 375°F for 3-4 minutes to restore crispiness. Freezing is not recommended.
