Crispy Lemon Herb Roasted Chicken with Potatoes

A simple and comforting roasted chicken recipe with crispy skin, fresh lemon, and herbs, paired with golden roasted potatoes that soak up all the savory drippings.

  • 1 whole chicken (about 4 lbs / 1.8 kg)
  • 1.5 lbs (700 g) Yukon Gold or baby potatoes
  • 2 large lemons (1 for zest and juice, 1 sliced for roasting)
  • 23 sprigs fresh rosemary
  • 34 sprigs fresh thyme
  • A handful fresh parsley (for garnish)
  • 4 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of smoked paprika

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels inside and out. Season generously with salt and pepper, then rub olive oil all over the skin.
  3. In a small bowl, mix minced garlic, lemon zest, chopped rosemary and thyme leaves, and smoked paprika if using. Rub this mixture all over the chicken, including under the skin if possible.
  4. Stuff the chicken cavity with the second lemon cut into quarters and a couple of herb sprigs.
  5. Optional: Tie the legs together with kitchen twine for even cooking and presentation.
  6. Cut potatoes into evenly sized chunks (about 1 to 1.5 inches). Toss them in a bowl with olive oil, salt, pepper, and a little extra chopped rosemary.
  7. Place the chicken breast-side up in the center of a roasting pan. Scatter the potatoes around it in a single layer.
  8. Roast for about 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part of the thigh. Stir the potatoes halfway through roasting.
  9. Remove the pan from the oven, tent the chicken loosely with foil, and let it rest for 10-15 minutes.
  10. Carve the chicken and serve alongside the roasted potatoes, garnished with fresh parsley and a squeeze of the roasted lemon.

Notes

Pat chicken skin dry before seasoning to ensure crispiness. Use a meat thermometer to check for doneness (165°F in thigh). Stir potatoes halfway through roasting for even browning. Rest chicken before carving to keep meat juicy. Optional broil for 2-3 minutes to crisp skin further.
