  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 garlic cloves, minced
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons fresh herbs (rosemary and thyme), finely chopped
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  1. Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook for 15-20 minutes, until potatoes are fork-tender but not falling apart.
  2. Drain the potatoes in a colander and let them cool for about 5 minutes.
  3. Preheat oven to 425°F (220°C).
  4. In a mixing bowl, combine melted butter, minced garlic, and finely chopped herbs. Stir well.
  5. Arrange potatoes on a greased baking sheet, spacing them apart. Gently press down each potato with a potato masher or the bottom of a glass until flattened but still in one piece, about 1/2 inch thick.
  6. Brush the smashed potatoes generously with the garlic herb butter mixture, then drizzle olive oil over them. Season with salt and freshly ground pepper.
  7. Roast in the oven for 20-25 minutes, or until edges are golden brown and crispy. Keep an eye on them during the last 5 minutes to avoid burning.
  8. If using Parmesan, sprinkle it over the potatoes about 5 minutes before the end of roasting to allow it to melt and brown slightly.
  9. Remove from oven and let rest for a couple of minutes before serving.

Let potatoes dry a bit after boiling to avoid steaming instead of crisping. Press potatoes gently to keep some texture. Roasting at 425°F is essential for crispy edges. Use a silicone brush to coat potatoes evenly with herb butter. For extra crispiness, avoid overcrowding the pan. Reheat leftovers in oven or air fryer to maintain crispiness.
