  • 1 lb ribeye or sirloin steak, about 1-inch thick
  • 2 medium Yukon Gold potatoes, diced into ½-inch cubes
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tbsp chopped parsley or thyme (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Pinch of smoked paprika or red pepper flakes (optional)

Instructions

  1. Prep the ingredients (10 minutes): Dice the Yukon Gold potatoes into uniform ½-inch cubes. Mince the garlic and chop fresh herbs if using. Pat the steak dry with paper towels and season both sides generously with salt and pepper.
  2. Cook the potatoes (15 minutes): Heat 1 tbsp olive oil over medium-high heat in your skillet. Add the diced potatoes in a single layer. Let them cook without stirring for about 5 minutes until the bottoms start to brown. Then stir occasionally to crisp all sides evenly, about 10-15 minutes total. Poke with a fork to test tenderness.
  3. Remove potatoes and rest: Transfer potatoes to a plate and cover loosely with foil to keep warm.
  4. Sear the steak (8-10 minutes): Add 1 tbsp butter to the same skillet over medium-high heat. When butter is melted and foamy but not browned, add the steak. Sear without moving for 3-4 minutes until a deep crust forms. Flip and sear the other side for another 3-4 minutes for medium rare (adjust time for desired doneness). During the last minute, add minced garlic and remaining 2 tbsp butter around the steak, spooning melted butter over to baste. Stir occasionally to avoid burning garlic.
  5. Rest the steak: Remove steak from skillet and let it rest for 5 minutes on a cutting board to redistribute juices.
  6. Combine and finish: Return potatoes to the skillet, toss with any garlic butter left behind, and sprinkle with fresh herbs. Slice steak against the grain and serve alongside the potatoes, spooning extra garlic butter over everything.

Notes

Do not overcrowd the pan to avoid soggy potatoes. Pat steak dry before seasoning for a better sear. Add garlic near the end of searing to prevent burning. Rest steak for 5 minutes before slicing. Use medium-high heat and adjust as needed to avoid burning butter or garlic. Leftovers reheat best in a skillet or under a broiler to maintain crispiness.
